Base tomato based sauce for use a pasta sauce or base for pasta. Subtle shades of grilled pepper and thyme make this a gentle sauce - try it with fish dishes.
Ingredients
800g tinned tomatoes (chopped)
1 Red Pepper
1 Red Onion (chopped)
2 Garlic Cloves (grated)
1tsp Granulated Sugar
1 Fl Oz White Wine Vinegar
Chopped Thyme
1 Bay Leaf
Method
Slice pepper in half and grill for 5-7 minutes until skin begins to char. Set aside to cool while you prepare the other ingredients. Remove skin (most of), seeds etc.. and slice roughly.
Add a good splash of olive oil into a pan and heat. Add chopped red onions and cook for 4-5 minutes until the colour becomes translucent. Add garlic and cook for another minute.
Add White Wine Vinegar and reduce (< 1 minute)
Add Pepper, Thyme and Sugar and stir in for 1/2 minute.
Add chopped tomatoes, bay leaf and (3 twists of) salt and pepper. Bring to boil and simmer for 30-35 minutes, stirring occasionally.
Remove from heat and remove bay leaf and allow to cool for a few minutes. Liquidise until smooth and allow to cool for 30 minutes.
Meanwhile, sterilise glass jars by filling with boiling water and allowing to stand.
Add to jars and label for future use. Allow to cool completely, add air-tight(ish) lid and store in the fridge.
Home made pasta/lasagne sheets made with pasta machine.
Recipe
300g Plain Flour
3 Eggs
Pinch of salt
Method
Lasagne Sheets
Sift flour into a bowl and make a "volcano" in the middle
Break in three eggs, add salt
Using spoon or knife mix the ingredients to a rough crumble
Use fingers and kneed together until smooth and elastic (10-15 minutes)
Wrap in clingfilm and rest for 30-60 minutes
Work again and roll on a floured surface, before cutting shapes in a pasta cutter machine.
Lasagne
Heat meat, onions, carrots (or other veg) in pan
Add pasta sauce
Layer sauce, pasta, cheese sauce (time two) and top with cheese
Cook until done.

The pasta tasted delicious, really delicate with the cheese sauce
The meat sauce had been diluted with half a tin of tomatoes, rendering the taste almost invisible, although overall the dish worked.
Pizza Dough Recipe
600mg flour
500ml water
1/2 tsp dried yeast
1 tsp salt
2 tsp vegetable oil
Method
Mix 500mg flour, 500ml water, yeast and salt in a big bowl and stir, initially with a spoon and finishing with fingers to bring in flour from the edges of the bowl. Result is still sticky.
Leave to rest in bowl, covered with a towel for 9 hours
Still sticky. Use the rest of the flour while working the dough
Cut into four piece. Can be stored.
Pizza
Roll dough out on grease-proof paper into circle
Add passatta (sauce above), grated cheese and pepperoni and cook for 20 minutes
Taste
Like pizza :)
Sauce has a nice spice to it
Didn't coat the dough in olive oil before cooking resulting in a slightly anaemic look to the crust. AJ said it tasted a bit doughy; HT said he liked that.
2nd Attempt
Using same prepared dough.
Roll dough on grease-proof paper with floor, brushed with olive oil and pricked with a fork
Pre-cook the dough for 5 minutes
Add toppings and cook for further 15 minutes
Taste
Better look, taste probably better
Maybe a little too much olive oil and pre-cook for longer, 6-8 minutes
3rd Attempt
Using the same prepared dough
Kneed for 5-10 minutes with flour
Do NOT curl the corners
Coat in oil (didn't prick)
Pre-cook at 150 degree C for 8 minutes
Remove and add toppings (Cheese - 3 parts Cheddar:1 part Parmesan; grated garlic and artichoke hearts)
Cook for another 20 minutes at 150 degrees C
Taste:
Best of the three. Nice pizza base and interesting topping variation.
