This is a different way to cook a pasta sauce. Roast ingredients in the oven; add tin tomatoes plus same volume of water, to produce a good volume of pasta sauce that can be easily frozen.
Ingredients
400g Tin Tomatoes (plus equal amount of water - use the tin)
2 medium carrots
1 medium sweet potato
1 red onion
3 cloves garlic
Juice of half a lime
4 sprigs of fresh rosemary
Salt & Pepper
Method
Roast chopped onion, carrots, sweet potato, garlic, rosemary in oven at 180 degrees for 50 minutes.
Transfer to pan and heat with tin tomatoes, season well with salt & pepper and lime juice for 3-4 minutes
Remove from heat and hand blend
Add water and reheat for 2-3 minutes until mixed
Allow to cool and package. Can be frozen in usable portion sizes or bottled for use in the near future.

Earthy flavours of the roasted vegetables and rosemary.
